How many passed appetizers?

Hi! So, we will have about 140 guests. During cocktail hour, we will have a large charcuterie board grazing table that's supposed to feed 140 and will have passed appetizers, as well. I was surprised that our venue coordinator seemed very confident, saying that she only thinks we need to do 2 additional passed apps per person, but that seems like a small amount to me. Right now, we are doing 3 passed apps per person, but I still feel like we should do more (despite her recommendation?) What do you guys think? I want to make sure our guests are very well fed.

Additionally, we will have a nacho station going throughout the night after dinner, as well as a late night snack at the very end of the night that will be a honey butter chicken biscuit sandwich.
