Question for all of you?

I see lots of pics of different cuts being cut into multiple pieces I’m guessing to serve multiple people easier. Why would you cut a striploin or similar into a dozen pieces then plate it for yourself. Wouldn’t it be better to keep the juice in the steak than on the plate.
