Selling my iPhone for an android

Turning 18 soon and want to limit the data the operating system itself steals from me. No clue if apple is taking screenshots every 30 seconds, or saving my photos and notes, or listening to me 24/7, etc. I do know they can decrypt my iCloud at any time though, so they might as well have access to my entire iPhone.

I have an iPhone 11 right now and am thinking of selling it, what could i get (used or new) and maybe adding in a hundred bucks? What type of android, or model? Or something not even android maybe. Preferably just something I can be sure isn’t spying on me and is open source. Not shit camera quality is also nice. I’d appreciate any advice.
