What is your favourite behind the scenes tidbit of the LOTR trilogy?

Mine personally, even though there's too many - is that the filmmakers considered portraying Sauron's physical form during the battle of the Morannon but ended up deciding limiting his form to just the eye. But there are multiple deleted scenes where you can see Sauron go straight into battle and start fighting Aragorn. Multiple of the shots with Aragorn were actually filmed with this in mind, some of which were then re-used for the final shots of the movie where Aragorn is then fighting the Troll. This Troll was actually supposed to be Sauron but they simply changed him digitally to the Troll instead!
