Games to play occasionally over a long time

I always enjoyed video games. There have been times I could focus on one large game like Skyrim or Fallout, but the older I get, the less time I got for playing - aside for other interessets. It took me almost a year to finish Red Dead Redemption 2, Breath Of The Wild, Assassins Creed, Dico Elysium (not in the same year 😅). I couldn't play that much, but in a quite steady amount. Since my son was born, these times are over. I still find time for playing, but it's seldom one or two hours once or twice a week. I know this isn't a very uncommon situation for people who grow up, so I ask what are you're suggestions for games to enjoy over a large period of time and easy to get back into? Right now I'm playing skyward sword and so far it's easy enough to get back in after a week without losing track. Aside I also play Skyrim with pausing for weeks, but I can enjoy roaming that much. Also quite perfect for me are roguelites on the switch, like Slay The Spire, Monster Train or Into The Breach and Diablo/Monster Hunter.

I don't mind playing a game over a year or more as long as I can easily return. So what are You're recommendations? A lot of these games are quite simple, so I don't know how long it takes me to get bored. RPGs are always a welcome suggestion ;)

I had also some games in mind that I am not sure if they really fit my situation, for example beeing too complex, require longer sessions, too story focused etc.: Snow Runner, Mad Max, No Man's Sky, Outer Wilds, Death Stranding, Nioh, Xenoblade Chronicles, Dragon Quest XI, Pillars Of Eternity/Deadfire, Devine Divinity OS2, Xcom2 (I know some take a time to dig in, but then they should get the flow). I know these games are quite large, but I wouldn't mi d playing easy mode or recap on the internet. But anyway, seeing this list already makes me realise I could be playing for many many years 😂
