Does anyone know how to make the seafood poutine from season 17 ep 2 "raising the bar" on Hell's Kitchen (U.S)

I'm watching the episode with my dad and hearing that he was making a seafood poutine was a real head turner! My dad loves seafood it's practically all he ate back in this 1st country. We live in Canada so we've seen and tried some crazy poutine combos before but never a seafood one. I've only cooked seafood once and that was just taking it out and putting it in the oven. Even if I'm not the biggest sea food enjoyer I'd be down to make and eat it plus my parents would probably love it regardless. I know it won't be Hell's kitchen quality but it's worth a shot.

I couldn't find a written recipe online and I'm kinda lost on the preparing it. I know the meal was made in 40 minutes because of the challenge but I have no idea how to get there. I rewinded the scene but I'm still not fully sure what to do.

If anyone has the recipe for it or a similar recipe please share it! I'm trying to get better at cooking and eating new things. It would mean a lot if I could try to make this for my family. Anything helps thank you!
